Spring smells and happy bird songs are floating through the open windows. Aaaahhhhh, I love this time of year. Soon I'll be planting herbs and flowers, and spreading grass seed around the yard. And, of course, I will be cooking--outdoors a lot! I've actually already been doing quite a bit of outdoor grilling. I just really like the way it smells.
And what says Spring more than grilled loin lamb chops and fresh asparagus? I love this food, and it was so good with the tzatziki sauce I made to go along with the lamb. Just the right amount of mint, cucumber and yogurt.
This is one of David's favorite meals: grilled filet of beef with roasted sweet potato. I used my crockpot to cook the potato since my oven is still broken (sigh) and it did an excellent job! Look at all that butter! Oh my. I love you paleo diet! I also roasted a mixture of delicious veggies (in my roaster oven) to go along with the steak and potato consisting of red and green bell peppers, yellow squash, portobello mushroom, and red onion. I tossed it all with olive oil, salt, pepper and Italian seasoning before dumping it in my Pampered Chef stoneware baking dish. Then I cooked it at 400 degrees for about 35 minutes. Yum, good.
The kids weren't left out either! Mom's Takeout provided them with grilled lobster! And roasted veggies and a russet potato baked in my crockpot. Sometimes it's fun to surprise them with yummy lobster.
