II've been cooking for a long time now--seems like forever--and recently I've been given the awesome challenge of preparing food to go. Me: Take-out Chef! Sparing Collin some of the financial burden of living on his own, I determined to help in some small way and came up with the idea of cooking dinner for him and Maddie. So, I cook and they pick up! Voila! Mom's Takeout was born!

This was an easy to make dinner of chicken and shrimp kebabs grilled on a charcoal cooker with added pineapple for yummy flavor. I laid them on a bed of greens. Food is ready to go!
Here, I made chicken and mushroom crepes with a Mornay sauce. These were fun to make and fairly easy since I was able to make the crepes ahead of time and fill later, making last-minute preparation much less hectic. The kids loved them!
Oh this was good! I seasoned chicken paillards with salt, pepper, and Italian seasoning; then I lightly floured them and seared them quickly in a skillet. I laid them on a baking sheet, spread homemade pizza sauce on top, added fresh mozzarella and cooked them quickly in a hot oven til the cheese melted. I topped them off with spinach and arugula, and sprinkled them with shredded Parmesan cheese. I got this idea from Rachael Ray and it's going in my "Recipes to Keep" folder. So good!
This "to-go" meal featured juicy, charcoal grilled butterflied leg of lamb that I seasoned with rosemary, lots of fresh garlic, lemon juice, olive oil and salt and pepper. I cooked Yukon Gold potatoes until they were just right and slathered them with butter, salt and pepper. The bright green asparagus was gently baked until tender with a nice spritzer of lemon juice at the end of cooking. A meal to remember!
